My Maple Roast Chicken Rawks!

Today I am a happy Mommy.  Not so much because a recipe I concocted on the fly didn’t taste all that bad, in fact my kids loved it!  They asked for seconds and all…and the recipe is not difficult to make too 🙂

This recipe is really inspired by the roast chicken my father-in-law used to cook.  It has been years since I’ve eaten it, so I figured why not I try it today…my backup plan (if this did not turn out) was to ask hubby to buy something back for dinner, but I am glad I didn’t have to resort to that.

Well, I’m just happy to add another chicken dish to my list of things to cook.  Here’s my recipe for Maple Roast Chicken.  If you do try it out, please let me know how this dish turns out 🙂

Maple Roast Chicken (yields 2-3 servings)

Ingredients

  • 2 chicken drumsticks and 2 chicken thighs (skin on, cut into chunks)
  • 2 tbsp dark soy sauce
  • 3 tbsp sugar
  • 3 tsp sesame seed oil
  • 1 tbsp oyster sauce
  • 2-3 tbsp light soy sauce
  • 1 tbsp All Spice powder
  • 2 tbsp maple syrup
  • 1 tbsp Shao Tsing Chinese cooking wine

Method (super easy!)

  1. Mix all ingredients together in a bowl.
  2. Cover the bowl and marinade in the fridge for at least 1 hour.
  3. Line a baking tray (I used my Pyrex glass baking tray) with aluminum foil.
  4. After 1 hour, pour chicken together with marinade onto aluminum foil.
  5. Preheat oven at 180ºC.
  6. Bake/roast in oven at 180ºC for about 45 minutes, or until color looks a beautiful dark roasted brown.
  7. Remove chicken and serve.
  8. If there is some marinade sauce left over, spoon out in separate bowl to serve as gravy if preferred.

    Looks yummy and easy! Good job on your on-the-fly recipe! The part about your backup plan made me miss Malaysia where dinner can be easily and inexpensively picked up! The only problem is deciding what to get!!

    Thanks for this idea! I have a bottle of maple syrup fermenting in the cupboard cos suddenly the kids don’t like pancakes (I bought the syrup for them).

    Did I read correctly that the oven need to be preheated for 1 hour? Thanks.

    The Giddy Tigress says: Oops, sorry for the confusion. Nope, the oven need NOT be preheated for 1 hour. The chicken needs to be marinaded for about 1 hour and then you can put the chicken into the oven to roast. I’ve rearranged the order of the recipe steps so that it’s clearer now. Thanks for bringing that to my attention 🙂

    By the way, what is All Spice powder? I omitted it this time since I was clucless what it was, hahah..

    The Giddy Tigress says: Thank you HK! I am glad that the recipe works for you! All Spice Powder is a type of spice that can be bought from off the shelves. Mine is from McCormick and comes in the standard little green bottle. Some people use 5-spice powder, you know…which is quite common in Chinese cooking. All Spice Powder is a variation of that, I guess… 🙂
