Oldie But Goodie: Salted Vegetable Tofu Soup

This soup was one of the few soups I used to dish out when I was a single working adult years ago.  It’s easy to make (dump everything inside), it’s delicious and it’s got that comforting factor, at least for me.  The sourish spicy flavor of the soup, together with its variety of ingredients make up a meal in itself too, if you’re not too picky.  Or you can simply eat it with steamed rice or your favorite noodles.

I had forgotten all about this soup until last weekend when I was browsing through a recipe book in the bookstore and saw a picture of this soup.  I started craving for it and today, I decided to transform that craving into a reality.

It was a delicious-smelling cauldron of spare ribs, salted vegetables, tomatoes, dried chillies and tofu, and it was my lunch for today 🙂

    Haven’t tried tofu soup with salted/marinated vegetables yet, looks very interesting. My favourite tofu and vegetable soup is tofu with tomato and bok choy! This is very light in texture but very refreshing with a touch of tender sweetness from the veges 😀
