Attempting Homemade “Bak Kwa”

A few days ago, I chanced upon Charmaine’s delicious-looking homemade “Bak Kwa” in Facebook.  I checked out the recipe and was intrigued that it didn’t look too difficult to make.

“Bak Kwa” is the Hokkien name for pork or chicken jerky, and is very popular especially during Chinese New Year.  I remember my Mom made some “Bak Kwa” when I was a little girl and she used the charcoal grilling method.  I remember helping her with some of the grilling and I clearly distinctly remember the heat and the perspiration.

So when I saw that Charmaine’s recipe (which is adapted from Nasi Lemak Lover) did not involve the charcoal grill and that I could make the “Bak Kwa” using the oven, I pounced at the opportunity.

And here’s what my first attempt resulted in:

 

Hubby said the smell of fish sauce in the “Bak Kwa” was a little too overwhelming though, but overall, I think it’s a good try.  Of course, it doesn’t taste exactly like the commercially-purchased ones, but it did bring a certain feeling of the Lunar New Year to our home.

Besides, there’s nothing quite like eating “Bak Kwa” sandwich with homemade bread! 🙂

I did substitute honey for maple syrup in the recipe, so that too might account for the difference in taste.  Still, it was a great experience sans the heat of the grill! 😀

Instead of Cereal for Breakfast, We Had…

The phrase you’re looking for is Blueberry Cream Cheese Loaf. 🙂

…and yes, it’s super yummy…

For weeks, I had been dreaming about this yummy loaf since I saw it on Pei Sze’s blog, and I had been waiting for the day when I would be able to try the recipe out for myself.

For the bread dough, I used the milk loaf recipe.  I prepared the dough the night before and allowed the dough to rise on the kitchen counter overnight.

And in the morning, I did the rest of the “work” in preparing the rest of the blueberry cream cheese loaf (recipe here).  This recipe yields two longish loaves of sinful yumminess.

Okay, I admit I’m not very good at braiding the bun properly, and it didn’t turn out quite as neat as I hoped it would.

But there’s something about fresh homemade bread on a Sunday morning that is absolutely inviting and yummy!  For one, the entire house smells heavenly!

…and eating this blueberry cream cheese loaf was like eating slices of blueberry cheesecake!  Yummy!

The kids complained that the blueberries were too juicy and they didn’t really like that part, but hubby and I loved it!  I don’t mind baking this again, if only to eat it all by myself! 🙂

It’s a Pizza…It’s a Cake…It’s…It’s….

…well, can I say it’s BOTH? 🙂

THIS was what I busied myself with Friday morning, in preparation for my son’s school Winter Festival in the evening.

I had volunteered to donate a cake for the Cake Walk game during the festival and I could bring in any kind of cake I’d wanted, in any creative manner.

After some deliberation and discussion with my hubby, I decided to go with something simple yet unique that I had not done before:  a Pizza Cake.  Quite simply, it’s actually a cake, which is decorated to look like a pizza. 🙂

Here’s what I used:

  • Pizza crust: Regular vanilla cake
  • Pizza sauce: Buttercream icing, colored with red and brown gel food coloring, in a rough ratio of 4:1, to get that authentic red-brown tomato sauce color.
  • Cheese: Shaved white chocolate, using either a cheese grater or a fruit peeler.  I didn’t have a cheese grater, so I used the peeler.
  • Pepperoni: Fruit roll-ups, cut into circles using either a round cookie cutter or bottle top.
  • Green peppers: Colored green fondant
  • Olives: Cut and cored blueberries
  • Minced beef: Shaved milk chocolate, using fruit peeler. On hindsight, I could also just used chocolate chips.

Decorating the cake was a whole lotta fun!

I’m Getting Laser Treatment Done

…and it’s estimated to take 4 weeks. 🙂

As far as I know though, it’s only available in the US right now.  I received an email invite to collect my free 2-week supply of Clinique’s Repairwear Laser Focus Wrinkle & UV Damage Corrector last weekend, and I promptly went over to the nearest Clinique counter to get mine.

After 2 weeks of usage, I’m supposed to return the empty bottle and thereafter, I will be given another 2-week supply.  No strings attached.  Sounds pretty darn good for a product that claims to give you results akin to a laser procedure, huh?

Ain’t No Comfort Like the Humble Bread Pudding

My previous attempt at the milk loaf did turn out well, however I left the a few remaining slices out overnight and in the morning, I found out that they had turned rock hard.  Hmmph.

It could be because they had dried out somewhat.  I read that I should have stored bread in plastic bags tied up, but nevertheless, I decided to use the bread to make bread pudding.  I zapped the bread for about 15 seconds in the microwave, and they softened a little, so I cut them up into little chunks for the bread pudding.  It was my first try at the bread pudding, but hubby is a big fan, so I wasn’t too worried about leftovers 🙂

I used the bread pudding recipe from Joy of Baking, and it was surprisingly easy to make.  I did not remove the crusts from my bread though, and I added some cranberries for some added texture and color.

It tasted awesome served with some evaporated milk.  You could also eat it with whipped cream, or ice cream for that bit of indulgence.

I couldn’t get enough of the bread pudding and since I had a little bit of the sandwich loaf from a few days ago still sitting in my fridge, I decided to bake a second batch of the bread pudding.  This time, I threw in some chopped-up apple cubes as well.

Works great as an after-dinner dessert as well as a wholesome yummy breakfast! 🙂
